Planked Pork with Apples and Onions
Graham Kerr has been a food innovator for decades. This is
one of his most incredible creations - oven-roasted, cedar plank pork tenderloin. This can
be the centerpiece at an elegant dinner when it is served sliced, smothered in the apples
and onions, right from the oven, on a large platter
Number of Servings: 6-8
Ingredients:
1 pre-soaked,
Tasty Timber Cedar Plank (Large or Jr.)
1tsp. olive oil
½ tsp. sesame oil
2 medium onions, peeled, halved and sliced
2 red apples, peeled and sliced
1 red or yellow bell pepper chopped
1 tsp. caraway seeds
1 tsp. Pork Rub (see recipe)
¼ tsp. salt and pepper
3lbs. lean pork tenderloin or pork chops
1 tbls. chopped parsley |

Rub
3 tsp. caraway power (or crushed caraway seeds)
1 tsp. marjoram
2 juniper Berries (crushed)
½ tsp. white pepper
A pinch ground cloves
1 tsp. dill weed
Grind all into fine powder. |
Instructions:
Pre-heat oven to 350F. Trim fat off pork and if using tenderloin, butterfly it so it lays
flat. Sprinkle a little Pork Rub and salt & pepper on the meat, both sides and let
stand for 10 min. before cooking. Heat a large frying pan over medium heat, add oil and
onions. Cook for 5-10 min. stirring often. Add apples, bell pepper, caraway seeds, salt
& pepper and 1 tsp. of the Pork Rub. Reduce heat to medium, cook for 15 min or until
apples are tender. Keep warm.
Place the pre-soaked Tasty Timber Jr. Grilling Plank in a roasting pan. Place
the pan with plank in the preheat oven for 20 min. Then carefully lay the meat on the hot
plank in the oven, smother with the apple-onion mixture. Cook for 30-40 min or until
internal temp is 150F. Remove from oven. Place pork in a pre-heated frying pan on med.
high heat for no more than 2 min on each side to brown. Thanks, Graham.
Serving Suggestion:
Place a small pile of the cooked apples and onions on a heated plate. Cut browned pork
into slices (cross grain), place 2-3 slices of pork onto of the apples and onions and
sprinkle with parsley and a pinch of Pork Rub. Serve with red or mashed potatoes for a
lovely meal. Enjoy! |
