Cedar Plank cooking was discovered by Pacific
Northwest Indians many years in the past. They cooked salmon on a damp cedar plank and
found that it enhanced the flavor of their fresh fish. Chefs around the Pacific Northwest
have since created innovative new ways of using cedar planks for foods other that salmon.
This is Tasty Timbers - helping to spread the word about how easy and flavorful it is to
cook using untreated western red cedar planks.
You can cook entire meals on a plank - meat or fish and veggies on a
single plank.
The smoke from the smoldering plank adds a smoky essence, while the
moisture from the pre-soaked plank steams and flavors the food, keeping it moist and
tender.
A few plank cooking tips:
Just rinse and then soak a Tasty Timber cedar plank in water for at least
an hour and up to a day - the longer the better. We use a camping cooler for the large
planks and weight it down with a pot of water.
As an option, you can soak the plank in other water-based liquids: white wine, beer, or apple cider depending on the recipe and kind of meat or fish. The
soaking ingredients will add an additional flavor of their own, as they gently steam into
the entree.
Before cooking, brush the smooth side of the plank lightly with a little
olive oil to keep food from sticking. Place your favorite meat, fish, chicken or veggies
on the plank and place it on a medium high, pre-heated (covered) grill.
You can use Tasty Timber grilling planks on the barbeque over charcoal or
gas and or in the oven.
Planks on the Grill:
After placing the plank on the grill, close the lid and cook for 20-40
min. Check the grill often, and keep a water spritzer handy to douse the flames on the
edges of the plank, if necessary. If the planks flare up often, turn down the gas (heat) a
little or reposition over the charcoal.
Planks in the Oven:
There are a growing number of recipes for cooking with Tasty Timber cedar
planks in the oven, like our tasty Cedar-Infused Apple Cider Turkey and Prime Rib with a

For baking in the oven, place the plank in a roasting pan and pre-soak it
in water, wine or cider for at least an hour. You should monitor the liquid level often
during baking to ensure at least one-quarter inch of liquid is present at all times. Baste
a prime rib roast or turkey with the drippings around the plank for even more flavor.
Planks on the Table:
For a wonderful presentation, place the plank right from the grill or oven
onto a heat resistant serving tray or trivet, then serve at the table. The cedar
smoldering centerpiece will have your guests running for the table! The results will be a
visual and culinary delight, and will make the house smell great too.
